*the recipe makes 4 waffle squares, so if you want each waffle square to have chicken in it, you can double the chicken recipe. However, if you prefer to have extra waffle with your chicken and waffle, you may leave the recipe as is.
1. In a large bowl, add buttermilk, pickle juice and chicken. Cover chicken with plastic wrap and marinate for 30 minutes.
2. In a separate large bowl, combine flour, cornstarch, paprika, garlic powder, salt and pepper.
3. In another separate bowl, whisk egg.
4. After marinating, dredge chicken in flour mixture, then dip into egg, then dredge in flour again. Place in lightly greased airfryer basket. Spray chicken breasts with nonstick cooking spray. Air fry at 390F for 12 minutes. Check chicken halfway through. If there are any white spots, spray with nonstick cooking spray.
5. Once chicken is done, make waffle batter. Add buttermilk, egg and oil to large bowl, then whisk to combine. Add in remaining ingredients and whisk to combine.
6. Place chicken on preheated waffle maker. Press down waffle maker to form indents on chicken. Pour waffle batter over top of chicken then cook until waffles are golden and crisp.
7. Serve hot with syrup, if desired.
