Cheddar Crusted Shepherd’s Pie Roll-Ups
40 mins prepServes 6
Thinly sliced potatoes are brushed with a garlic butter and placed on top of cheddar cheese that forms a delicious cheesy crust on this Shepherd’s Pie Roll-Up recipe. The filling is my own version of Shepherd’s pie that I grew up on.
1. Preheat oven to 350F.
2. Place a sheet of parchment paper on a ¼ sheet pan (make sure you have some that over hangs off the pan slightly. This will help at the end). Sprinkle 1 ½ cups cheddar cheese evenly over parchment paper. Add sliced potatoes in rows on top of cheese.
3. In a small bowl, whisk together ingredients for garlic butter. Brush over top of potaotes. Bake in oven for 18 minutes.
4. Meanwhile, in a large skillet, add hamburger, shallot, garlic, rosemary, thyme, salt and pepper. Break apart meat as it cooks and cook until meat is browned.
5. Whisk together cornstarch and water until combined. Add the cornstarch solution and remaining ingredients to hamburger. Stir to combine. Bring mixture to a boil, then reduce to a simmer. Cover with a lid and cook 10 minutes, or until carrots are softened.
6. Pour mixture over cooked potatoes. Taking the edges of the parchment paper, roll the mixture into a log. Garnish with fresh parsley, slice into pieces and enjoy!
